
Cedric was the representative of Hogwarts in the Triwizard Tournament, Tonks was a young and brave Auror, and Sprout helped win the war by chucking Mandrakes at the Death Eaters. I don’t get where the stereotype came from.

Again, it comes down to the the defining traits and people tend to forget Hufflepuff’s, to those people’s own discredit.
Hufflepuff’s are loyal, dedicated, hardworking, judicious, and patient. Their defining traits don’t mean they don’t have any of Gryffindor’s bravery or Slytherin’s shrewdness… it just means that their defining traits are the ones they are most possessed of.
Cedric was every bit as brave as the bravest Gryffindor, but he worked hard to become the all-star he was. Gryffindor’s, from my own personal experience, aren’t really all about putting in the work. It’s not that we can’t, it’s just that we’d really rather not. That’s the thing, though: Hufflepuff’s probably aren’t all gung-ho about working hard either (though some are), they just recognize and accept the necessity of it.
Tonks was every bit as cheeky as your average Gryffindor, but her loyalty to her loved ones and her duties as an Auror defined her even more so than her ever-changing hair and effervescent humor. She gave her life for those she cared about, fighting side-by-side with her beloved. Of course Gryffindor’s have done the same (Lily, most famously of all), but… I dunno.
A lot of Sorting comes down to what the person identifies as. There’s a lot of gray area wherein it becomes difficult to discern which traits are strongest in which people… so it then becomes about which traits are most important to which people. Not all Gryffindor’s are obviously possessed of courage from the beginning, but it’s obvious that they place high importance on bravery. Like, before Neville silenced every naysayer by beheading Nagini, he would always be shown testing his mettle in small but meaningful ways… like trying to protect the trio from themselves in the first book, or helping out Harry during the Tri-Wizard tournament. Neville is, to me, the epitome of a Gryffinpuff, the same way Cedric and Tonks were Huffledors. It’s about what the characters THEMSELVES value in others and in themselves.
